FILLOA COOKING
Like any gastronomic event, the Lestedo Filloa Festival seeks to promote and publicize the product par excellence of Boqueixón and the entire Galician carnival: filloas.
With this in mind, Filloa Cooking was launched as a programme of activities that, by means of different workshops, enables the public to become more familiar with the traditional recipe of filloas and the most avant-garde preparations.
In addition, the program takes into account accessibility for different groups. For this reason, it includes a cooking show with all the recipes suitable for celiacs, and a workshop for people with hearing disabilities.
Filloeira School Workshop
The Filloeira School is a workshop designed for children and young people to learn first-hand the secrets of filloas. To this end, different sensory games are developed, focussing on taste, touch, or smell based on this traditional dessert.
During the activity, attendees also learn how to prepare filloas in the traditional style, taking care of their preparation with the help of Lestedo’s filloeiras, and supplementing them with different fillings.
Gluten-Free Filloa Cooking Show
The Gluten Free Filloa Cooking Show is an activity fully adapted for people with celiac disease. It features up to five gluten-free filloa recipes using corn, buckwheat, rice, chickpeas, and chestnuts that, combined with different fillings, turn traditional filloas into absolutely avant-garde dishes.
The recipes are prepared live by guest chefs -last year’s invited chefs were José Manuel Mallón and Roberto Filgueira- and tasted by the more than forty attendees at the event.

Filloa Inclusive Workshop
In this workshop, the hearing-impaired share the spotlight with the strars of the party: filloas.
The activity, which has a sign interpreter at all times, consists of an informative part in which attendees taste the original Lestedo filloas, also accompanied by different essences; and a tasting part in which two more innovative recipes are prepared and savoured.
