Santiago de Compostela’s Integration Centre for Vocational Training hosted a master class featuring Lestedo “Filloas” this morning, imparted by the chef of Nove Group and owner of the O Balado restaurant (Boqueixón), one of four in Galicia that have been awarded a Green Star. This initiative is organised by the “Filloa” Cultural Association and GDR Terras de Compostela to show future chefs the culinary possibilities of the Lestedo “Filloa.”
Roberto Filgueira prepared a menu based on the Lestedo “Filloa,” especially in combination with another prestigious local product, the Vila de Cruces “Gallo de Corral” (free-range chicken). Before that, Filgueira suggested other Lestedo “Filloa” pairings with foie, blue cheese, and sea bream. However, the most popular dish among the intermediate and advanced cooking students was the pairing between the Lestedo “Filloa” and the Vila de Cruces “Gallo de Corral” (free-range chicken).
After the master class, the president of the “Filloa” Cultural Association, José Manuel Canabal, and the president of the GDR Terras de Compostela, María Guarina Rey Vázquez, hosted a tasting of Lestedo “Filloas” in dishes prepared by students studying cooking at the CIFP Compostela centre. A menu made up of a hot dish featuring flowering turnip tops and Arzúa Ulloa cheese with clear soup; laminated scallop with a scallop emulsion, avocado, and Salicornia; veal tail stuffed with celeriac puree and tomato paste; and cheese puff pastry and quince with coffee liqueur reduction.
XXXIX Filloa Festival, Sunday
This initiative brings to an end the promotional activities of the Lestedo “Filloa,” whose main day will take place this Sunday, March 6. At 10 am the filloeira machine will start up and at 11 am Lestedo’s “Local Social” hall will host the opening of the photography exhibition entitled “39 years making filloas,” organised by the Lestedo residents’ association.
There will be a performance by the music groups of the “Mestre Manuel Gacio” Cultural Association (11.30 am) and a traditional Carnival parade (12 noon). The Carnival rhymes full of irony and humour will be followed by the actress María Mera, who will once again present the festival’s opening speech, which will be given by the teacher and writer Xosé Manuel Lobato. The Finisterre orchestra will round off an intensive morning of activities with a vermouth session. This group, along with the Olympus orchestra, will liven up an open-air dance from 6 pm onwards.
